Smoked Cornish Hens
Smoked hens are nice and tender compared to chicken.
Ingredients
- Cornish hens
- Mayonnaise
- BBQ Rub
- 1/2 cup kosher salt
- 1/2 cup brown sugar
Instructions
- Defrost cornish hens
- Mix water, 1/2 cup salt, and 1/2 cup sugar in a large pitcher for brining
- Place cornish hens in the brine for 2 hours
- Remove cornish hens from brine and dry them
- Apply mayonnaise then BBQ Rub
- Heat smoker to 250°F
- Place cornish hens in smoker
- Smoke until hens are about 195°F
- Or smoke for 2 hours
