Smoked Cornish Hens

Smoked hens are nice and tender compared to chicken.

Ingredients

Instructions

  1. Defrost cornish hens
  2. Mix water, 1/2 cup salt, and 1/2 cup sugar in a large pitcher for brining
  3. Place cornish hens in the brine for 2 hours
  4. Remove cornish hens from brine and dry them
  5. Apply mayonnaise then BBQ Rub
  6. Heat smoker to 250°F
  7. Place cornish hens in smoker
  8. Smoke until hens are about 195°F
  9. Or smoke for 2 hours
