Smoked Pork Belly
This recipe is for smoking cuts of pork belly. The result is something like Smoked Butt but more fatty and cooks in a fraction of the time.
Ingredients
- Strips of pork belly
- Mustard
- Batch of BBQ Rub
Instructions
- Wipe pork belly with thin coat mustard
- Coat with BBQ Rub
- Refrigerate for an hour or two
- When you are ready, preheat smoker to 225°F
- Place pork belly in smoker with the fattiest parts facing up
- Smoke it until temperature reaches 201°F; about 2 hours
- Remove pork belly from smoker
- Let rest for 30 minutes
