Smoked Pork Belly

This recipe is for smoking cuts of pork belly. The result is something like Smoked Butt but more fatty and cooks in a fraction of the time.

Ingredients

Instructions

  1. Wipe pork belly with thin coat mustard
  2. Coat with BBQ Rub
  3. Refrigerate for an hour or two
  4. When you are ready, preheat smoker to 225°F
  5. Place pork belly in smoker with the fattiest parts facing up
  6. Smoke it until temperature reaches 201°F; about 2 hours
  7. Remove pork belly from smoker
  8. Let rest for 30 minutes
